Crock pots are the new American idols. Healthy slow cooker recipes are stealing the limelight from the regularly prepared meals. Sorry, microwaves and non-stick pans.
On my visit, I was fortunate to catch the happy hour/late-night-bites, menu and ordered from the chef's grill. I stuck with the tacos. They were not only environmentally-conscious, local-ingredient-filled, but more so, delicious. I know my tacos. I had two chicken tacos crockpot and one chef's choice of meat, which happened to be pork. I loved the idea of locally farmed ingredients, and surprise me with choice of meat option. The flavor did not disappoint.
Food is the next important item on our list. In keeping with Mexican Halloween traditions, have your guests bring a pot luck of Mexican dishes. Some ideas for Mexican food are tortillas, chips and salsa, grilled taco chicken salad and many more. How about desert? What's a Halloween party with mouth watering deserts? Who doesn't love pumpkin pie? Whatever your desert selection, make sure you give your guests a special treat that will have them going back to the desert bar. Be sure to find out if anyone has restrictions on their diet. Having a meal alternative ready for such a guest will show kind consideration for their needs. It should be up to your director/supervisor whether alcohol will be served or not. Most companies forbid the use of excessive/any alcohol during company events.
The bulk of the recipes I planned to use were ones that would incorporate the use of my slow cooker chicken taco, used natural ingredients, and where the initial recipe would make one meal today and morph into an entirely different recipe tomorrow. I planned a month's worth of meals and then shopped for a week's worth of ingredients at a time. The meals were made up of vegetables, meats, poultry, and common pantry items.
